Sgraffito is a technique I've used before, in sculpture I. The technique is versatile and it helps to convert 2D ideas/designs onto a piece you can hold in your hand. A difficult aspect of sgraffito is that once you carve away, It's hard to put back. For any kind of piece, I think it's a good way to practice embracing mistakes. I'm not sure how I'm going to use this in my future pieces, but I'd like to use this technique on a clay piece other than a slab because I've only experimented with sgraffito on flat surfaces as of this semester.
